Chicken Changezi:
Ingredients:
Chicken cut in pieces ½ kg
Clarified butter ½ cup
Milk 1 cup
Ginger garlic paste 1 tbsp
Tomato paste 4 tbsp
Coriander powder 1 tbsp
Chili powder ½ tbsp
All spice 1tsp
Cream ½ cup
Chaat masala ½ tbsp
Lemon juice of 2 lemons
Ginger (small pieces) 15 gm
Green chilies (cut long) 2
Dried fenugreek leaves ½ tbsp
Salt to taste
Ingredients for paste:
Cashew nuts (fried) 2 tbsp
Water ¼ cup
Onions (fried) 3
Method:
Fry chicken in clarified butter and remove. Then in same clarified butter add ginger garlic paste and saute for 1 minute. Then add tomato paste and cook. Now add coriander powder, red chili powder, chaat masala, all spice, salt, milk and cook until oil comes up. Then add cream and paste of cashew nuts and onion. After that add chicken, dried fenugreek leaves, ½ cup water and cook for 10-15 minutes. In last add coriander leaves, ginger, green chilies, lemon juice and serve.
Mango Pudding:
Ingredients:
Mango cubes 1-1/2 cup
Soaked unflavored gelatin 1 tbsp
Milk or coconut milk ½ cup
Cream (chilled) ¼ cup
Powdered sugar ¼ cup
Method:
Blend 1 cup mango, milk and gelatin. Mix cream and sugar in blended mixture and let it set. Garnish with mango chunks and serve.
